I’ve never done much baking. Not working & being home lots now is a good time learn. Got going on a sourdough starter today since yeast is impossible to find. It's already forming bubbles 2 hours in, it's kinda working.

It was trying to find a rye or whole wheat flour get it going. All Pourpose flour lacks the enzymes for a good starter. A found a little bag of whole wheat flour at the store.

I had two starters, one from a friend , one from King Author flour. I recently ditched the one from a friend because the commercial one had a bit more funk going on. Both worked well though. My guess is that the homemade one was put to use too soon and it never had a chance to develop. Generally once it is going and you make it overnight on the counter it will have a fully funky but good taste, in the fridge, same type of rise, but less funk. Something about the yeast making less acidic byproduct with the colder rise. Lots of fun ways to use it.

I'll give it a week before it's used any. It has gained a 1/16 of a inch with lots of bubbles. It should do good.

Hmmm. This is a great idea. I somewhat regularly bake bread for our house, since it's gluten free. The cookbook i use has a chapter on sourdough starters and I haven't had the nerve to try it. Now's as good a time as any.

Looks at your ingredients and this is what I came up with

That is to grow it in the 1st week, after that it’s just maintaining it.

We made bread yesterday. It was awful. Aldi had the king size white bread for 25 cents a loaf today. Score.

Making bread is an art. I’ve done it a little before, I have a rough idea on how it works.
